Our organic Ethiopian coffee blend comes from the Sidama Coffee Farmers Cooperative Union (SCFCU), Ethiopia’s second-largest coffee-producing cooperative union. The SCFCU represents 53 primary cooperatives and more than 80,000 farmers in the Sidama Zone, all of whom have been certified by the Fair Trade Labeling Organization International (FLO) since 2003.

Ethiopians have consumed coffee for hundreds of years and the members of SCFCU have been cultivating, processing and perfecting their specialized coffee blend for almost 35 years. Today, the Permata Gayo cooperative continues to assist local coffee farmers in protecting and increasing their coffee production in a lush yet perilous tropical climate.

The COMSA cooperative was established in 2001 with the goal of supporting 69 small-scale coffee growers in Marcala, Honduras. Today, the COMSA cooperative works with Corporacion Educativa para el Desarrollo Costarricense (CEDECO) to improve their fields and produce remarkably high-quality, organic coffee blends.

The thousands of COMSA farmers are now known for their creative processes and organic farming methods, which produce a robust green coffee that is exclusive to the Marcala region. Even though the method is called honey processing, the process does not actually use honey. Rather, it pertains to the fermentation process that local farmers use. The honey processing method preserves the mucilage or “honey” on the coffee cherries while they dry, in contrast to the conventional procedure of grinding the pulp and washing the mucilage off the cherries. With our Honey Processed Honduras Blend, you will experience a medium roast coffee that tastes delightful and subtly sweet.
