Our organic Decaf Honduras coffee blend comes from the Café Organico Marcala Sociedad Anonima (COMSA) co-op, which initially used conventional farming methods but has since transitioned to organic farming methods. Founded in 2001, the COMSA co-op was created to assist 69 small-scale coffee farmers in Marcala, Honduras. Today, the COMSA co-op works with Corporacion Educativa para el Desarrollo Costarricense (CEDECO) to transform their lands for the better and create organic coffee blends of exceptionally high quality.

These days, the thousand-strong COMSA farmers are recognized for their innovative methods and organic practices that produce robust green coffee unique to the Marcala region. Through their ingenious organic practices, the COMSA farmers created our organic Decaf Honduras coffee blend with its exquisite flavors of kettle corn and dark chocolate.

Our organic Honey Processed Honduras coffee blend comes from the country’s Café Organico Marcala Sociedad Anonima (COMSA) co-op, which specializes in innovative practices and methods to create coffee of exceptionally high quality. One of these innovative methods is called "honey processing."

Despite having the word "honey" in it, this method doesn't involve actual honey. Instead, it refers to the fermentation process farmers employ. Unlike the typical method of milling the pulp and washing the mucilage off coffee cherries, honey processing keeps the mucilage, or the “honey,” on the cherries as they dry. What you get is a medium roast coffee blend with a clean and slightly sweet taste. A truly exceptional Marcala classic, our organic Honey Processed Honduras coffee blend boasts a distinctly fruity aroma and exquisite flavor with floral undertones.

As Ethiopia’s second largest coffee-producing cooperative union, the SCFCU represents 53 primary cooperatives and more than 80,000 farmers in the Sidama Zone, all of whom have been certified Fair Trade by the Fair Trade Labeling Organizations (FLO) since 2003.

Coffee has been part and parcel of the Ethiopian way of life for hundreds of years. For more than 35 years, the members of the SCFCU have been working tirelessly to grow, process and perfect their specialty coffee blend. The Ethiopian culture shines brightly in the diversity and quality of their coffee blend, which is a light to medium roast with a creamy body and the slight taste of red berries and cocoa.

The Permata Gayo co-op initially began as a small-scale means of promoting organic coffee growing in the Gayo region of Sumatra, but has since expanded into a full-blown cooperative with more than 2,000 members. Today, the Permata Gayo cooperative continues to help local coffee farmers protect and grow their yields in a lush yet perilous tropical climate.

The Permata Gayo co-op created our specialty organic Sumatra coffee blend in an effort to help residents of the Gayo region earn a steady income from Fair Trade coffee.
